Carcar lechon: what makes it different and where to buy it

How Carcar lechon is served, where the lechon stalls are, what a kilo costs, buying tips, and the lechon places in our Carcar directory.

Carcar sits about 40 km south of Cebu City, and its lechon is one of the main reasons people stop. Travel writer Ivan Henares called it “the pork capital of Cebu” in 2009, pointing to the lechon stalls at the public market. Along with chicharon, Carcar lechon was among the foods lined up for the Discovery Channel travel show Phil It Up in 2014, The Freeman reported.

What makes it different

Cebu lechon is seasoned from the inside. The pig is stuffed with lemongrass, star anise, bay leaves, garlic and green onion before roasting, so it needs no sauce, The Freeman explains. Carcar follows that tradition, with two habits of its own at the counter:

  • Chopped to order, with the drippings. Vendors chop the meat in front of you and pour the juices from the cavity over it.
  • On the salty side. A SunStar food feature found Carcar lechon on the salty side, so it goes well with plain rice.

You will read online that Carcar lechon uses a special local herb. We could not find a reliable source for that, so we are not repeating it.

Where to buy it

The public market. The lechon stalls are inside the Carcar public market. Locals call the lechon section behind the wet market the litsonan. Several vendors sell side by side, so you can compare before you buy. The chicharon, ampao and bucarillo stalls are a short walk away, around the rotunda (SunStar).

What it costs

Market lechon is sold by the kilo. SunStar found ₱400 a kilo in 2018, with the price regulated and printed on a tarpaulin at the stalls. A travel blog reported the same ₱400 a kilo in September 2026. Prices move with the price of pork, so check the posted price before you order.

Tips for buying

  • Ask for a taste before you buy, and compare a few stalls.
  • Watch the scale. In 2019 the city closed four lechon stalls for selling spoiled meat and using wrong weighing scales (SunStar editorial). Buy from a busy stall and watch the weighing.
  • Go earlier in the day for the most choice.
  • For a whole lechon, call one of the places above a day or more ahead to ask.
